Step 1: Get out a large saucepan and bring the water, ginger, and sugar to a boil over medium-high heat. Stir until the sugar is dissolved.
Step 2: Remove the pan from the heat and add the tea bags. Cover the pan; let the tea bags steep for 15 minutes.
Step 3: When done steeping, remove the tea bags and pour the tea through a sieve into a bowl or pitcher. Remove the ginger. Set the bowl or pitcher into an ice bath and stir in the lemon juice.
Step 4: Put into the refrigerator until the tea is completely cold.
Step 5: When you are ready to serve it, put ice into a glass. Pour in tea and as much sparkling water as you desire.
