Step 1: Heat oven to 375°F.
Step 2: Spray 3-quart casserole with cooking spray.
Step 3: In 10-inch skillet, cook sausage over medium-high heat 3 minutes, stirring to crumble.
Step 4: Add onions and peppers.
Step 5: Cook 5 minutes longer or until sausage is no longer pink and vegetables are tender.
Step 6: Season
Step 7: Place mixture in large bowl.
Step 8: Add hash browns, 11/2 cups of the cheese, the sour cream and soup
Step 9: Stir to coat.
Step 10: Spoon mixture into casserole.
Step 11: Add cornflakes if using
Step 12: Top with remaining 1/2 cup cheese.
Step 13: Bake uncovered 50 minutes or until potatoes are tender and top is golden brown.
