Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 2 carrots, diced
  • 1 clove garlic, smashed
  • 8 cups chicken stock
  • 14 ounces tomatoes, (Italian crushed, seasoned with garlic and oregano) (1 can)
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried basil
  • 1.4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 4 ounces dry ditalini pasta
  • 15 ounces spinach, drained (1 can)
  • 1 teaspoons salt
  • 1 teaspoons freshly ground black pepper
  • Meatballs
  • 8 ounces raw ground chicken
  • 1 egg
  • 1 clove garlic, smashed
  • 2 ounces parmesan cheese, grated
  • 1 cup Italian breadcrumbs
  • 1/4 cup onion, minced
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 mushrooms, minced
  • Topping
  • 4 ounces parmesan cheese

How to Make

  • Step 1: Saute onion, celery and garlic.

  • Step 2: Add rest of ingredients.

  • Step 3: Mix the meatballs and make marble sized meatballs.

  • Step 4: When soup starts boiling add raw meatballs.

  • Step 5: Don't stir until meatballs cook.

  • Step 6: Cook for 30 minutes.

  • Step 7: Add cheese last.
