  • 3 pounds beef chuck roast
  • 3 ounces bacon ,chopped
  • 1 cup onion ,chopped
  • 1 clove garlic,smashed
  • 2 serrano pepper,minced
  • 1 can (28 ounce ) green enchilada sauce
  • 1 cup beef stock
  • 1/4 cup cilantro,minced
  • 1 teaspoons pepper
  • 1 tablespoons lime juice
  • 2 cans (30 ounces) pinto beans, (15 ounces each),drained
  • Garnish:
  • 1/4 cup cilantro,minced
  • 4 radishes,sliced
  • 2 limes ,quartered

  • Step 1: Put everything but the beans in

  • Step 2: Turn cooker on low and cook for 6 hours adding water if needed

  • Step 3: Add beans and cook another 2 hours until meat is tender
