The ingredients are:
  • 3 tablespoons olive oil (divided)
  • 1/3 cup artichoke hearts (marinated, chopped)
  • 4 ounces salami, chopped (1/3 cup)
  • 2 ounces pepperoncini, chopped (1/4 cup)
  • 2 tablespoons red-wine vinegar
  • 1 tablespoon fresh oregano, chopped, plus more for garnish
  • 1 pound boneless skinless chicken breasts (cutlets)
  • 1/2 teaspoon ground pepper
  • 2 ounces mozzarella cheese (thinly sliced)

How to Make

  • Step 1: Preheat broiler to high.

  • Step 2: Mix 2 tablespoons oil, artichoke hears, salami, pepperoncini, vinegar and oregano in a medium bowl.

  • Step 3: Heat the remaining 1 tablespoon oil in a large oven proof skillet over medium-high heat. Sprinkle chicken with pepper and add to the pan cook until starting to brown, about 3 minutes. Turn the chicken over and top each piece with the artichoke mixture and cheese.

  • Step 4: Transfer the pan to the oven and broil the chicken until the cheese is browned and an instant-read thermometer inserted in the thickest part of the chicken registers 165°"F, 3 to 4 minutes more.

  • Step 5: Serve the chicken with any pan drippings and oregano, if desired.
