Step 1: Combine the miso and 8 cups (2 litres) water in a large saucepan over high heat and bring to the boil and then reduce heat to medium and add the ramen noodles and mushroom and cook, stirring occasionally, for 5-7 mins or until the noodles are tender.
Step 2: Ladle the noodle mixture evenly among serving bowls and top with the tofu and sliced spring onion and serve immediately.
