Ingredients

The ingredients are:
  • 500 grams pork mince
  • 1 garlic clove, minced
  • 2 teaspoons ginger, fresh finely grated
  • 4 cups chicken stock, salt reduced (1 litre)
  • 1 tablespoon soy sauce
  • 20 grams ginger, fresh extra peeled and thinly sliced
  • 1 garlic clove, extra thinly sliced
  • 170 grams instant noodles, 2 x 85 gram packets
  • 1 carrot, peeled and cut into matchsticks
  • 100 grams snow peas, thinly sliced lengthways
  • 1/3 cup coriander leaves
  • 2 spring onions, thinly sliced
  • 1 chilli, long red thinly sliced to serve
  • Lime wedges, to serve

How to Make

  • Step 1: Combine the pork, minced garlic and grated ginger in a medium bowl and season with salt and finely ground white pepper and then using your hands to roll 2 teaspoonfuls of pork mixture into a ball and transfer to a plate and repeat with remaining pork mixture.

  • Step 2: Combine the stock with 3 cups (750ml) water in a large saucepan and add the soy sauce, sliced ginger and sliced garlic and bring to the boil over high heat and then reduce heat to medium and add the meatballs and cook for 5 mins or until just cooked through and then add the noodles, carrot and snow peas and cook for 2 mins or until noodles are tender.

  • Step 3: Divide the soup among serving bowls and sprinkle with coriander, spring onion and chilli and serve with lime wedges.
