Ingredients

The ingredients are:
  • 6 medium eggs
  • 20 ounces spinach (two 10 ounce each packages frozen chopped spinach, thawed and squeezed dry)
  • 6 ounces feta cheese (crumbled, 1 1/2 cups)
  • 1/3 cup onion, chopped
  • 2 cups ajvar
  • 2 tablespoons fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried dill
  • 1/8 teaspoon black pepper

How to Make

  • Step 1: Preheat oven to 400F.

  • Step 2: Spray a one quart baking dish with nonstick cooking spray.

  • Step 3: Whisk eggs in a large bowl until frothy. Stir in the spinach, feta, onion, ajvar and spices.

  • Step 4: Pour into the baking dish.

  • Step 5: Bake until set (about 20 minutes). Let stand for 5 minutes before serving.
