  • 2 tablespoons milk
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/6 teaspoon black pepper
  • 1 teaspoon butter
  • 1 cup zucchini, diced

How to Make

  • Step 1: Whisk eggs, milk, dill, salt and pepper together in a medium bowl until blended.

  • Step 2: Spray medium non-stick skillet with nonstick cooking spray. Add butter and melt over medium-high heat.

  • Step 3: Add zucchini and saute until lightly browned (about 4 minutes). Remove from pan and set aside.

  • Step 4: Add egg mixture to pan and return to medium-high heat. Cook until edges are set.

  • Step 5: Use a spatula to add zucchini to omelet. When eggs are set, fold omelet over.

  • Step 6: Divide omelet into two pieces and serve.
