  • 3 pounds beef chuck roast
  • 2 cups onions,chopped
  • 2 cloves garlic,smashed
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1/4 teaspoon rosemary
  • 1 bay leaf
  • 1 cup red wine
  • 4 cups beef stock
  • 4 carrots,chopped
  • 1 stalk celery,chopped
  • 2 pounds red potatoes,small ,whole

How to Make

  • Step 1: Heat oil in dutch oven

  • Step 2: Season meat with salt paprika and pepper

  • Step 3: Brown meat on both sides

  • Step 4: Remove

  • Step 5: Add onions

  • Step 6: Add garlic

  • Step 7: Add herbs

  • Step 8: Add wine

  • Step 9: Add meat back in

  • Step 10: Add broth

  • Step 11: Cover and simmer for 2 hours

  • Step 12: Add vegetables and simmer for 1 hour more add water as needed

  • Step 13: Take out bay leaf
