Step 1: Mix all ingredients EXCEPT THE FISH in a small bowl. Pour into a non-stick skillet. Place fish loins in skillet. Cover with a lid and cook on medium-low heat for 25 minutes, turning fish halfway through. I use 2 spatulas so the fish doesn't break apart.
Step 2: When it's nearly done, remove lid and turn heat up to medium and let sauce reduce a little so you can pour it over the fish when plated.
