  • 5 ounced fresh baby spinach, washed
  • 1 tablespoon olive oil
  • 3/4 cup sweet onions, chopped
  • 1 large garlic clove, minced
  • 3/4 teaspoon cayenne
  • Salt an pepper to tasre
  • 1 cup black beans, rinsed, drained
  • 1/2 cup fresh tomatoes, chopped

How to Make

  • Step 1: Heat the oil in a wok or skillet, medium heat, add garlic and onions, saute for 8 minutes or until the onions are translucent

  • Step 2: Mix the cayenne with the black beans and add to the skillet for about 1 minutes

  • Step 3: Add tomatoes, season with salt and pepper, saute 2 minutes

  • Step 4: Add spinach, toss, saute for 2 minutes more or until the spinch has just wilted and heated through
