Step 1: Preheat oven to 400° F.
Step 2: Season salmon with 2 tablespoons of olive oil, salt and pepper. Roast to desired doneness (about 12 minutes; recommended internal temperature; 145°F).
Step 3: In a saute' pan over medium-low, sweat the onion and garlic in remaining olive oil until slightly caramelized. Add the wine and reduce by two-thirds. Add the cream; reduce by half. Add the tomatoes, season with salt and pepper, and finish with the butter and basil. Add the shrimp and cook for a minute. Adjust seasonings if necessary and serve with the salmon.
