  • 12 ounces tomatoes, peeled, seeded, and cut into small cubes (= 2 tomatoes)
  • 2 ounces radishes (= 6 medium radishes, sliced thin)
  • 1 ounce onion (= ½ cup, finely chopped)
  • 2 ounces celery (heart, finely chopped = ½ cup)
  • 1 teaspoon Dijon mustard
  • 1 pound beets (small beets, cooked, peeled, cooled, cut in thin strips = 4 small beets)
  • 1 1/2 ounces olives, sliced (= ¼ cup, green olives)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon curry powder
  • 2 tablespoons wine vinegar
  • 6 tablespoons olive oil

How to Make
