Ingredients

The ingredients are:
  • 1 tablespoon garlic, minced
  • 1 tablespoon dijon mustard (stone-ground)
  • 1 tablespoon dry white wine
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Tabasco sauce
  • 1 teaspoon Herbs de Provence
  • 1/2 teaspoon salt (scant)
  • 1 1/2 pounds chicken thighs (skin on, bone in)

How to Make

  • Step 1: Preheat oven to 400 F. Place a cast iron skillet on the stove and heat over high heat.

  • Step 2: Combine all ingredients EXCEPT chicken in a large bowl. Place the thighs in the bowl and rub the mixture to coat all over.

  • Step 3: When the skillet is hot, place the thighs, skin side UP, into the skillet. Cook the chicken for 5 minutes. DO NOT TURN. You are not browning the chicken, just warming it up.

  • Step 4: Place the skillet in the preheated oven and cook for 35-40 minutes, until internal temperature is 165 F and the juices run clear. The chicken will be browned and pretty dark on top.
