Step 1: Preheat oven to 400 F. Place a cast iron skillet on the stove and heat over high heat.
Step 2: Combine all ingredients EXCEPT chicken in a large bowl. Place the thighs in the bowl and rub the mixture to coat all over.
Step 3: When the skillet is hot, place the thighs, skin side UP, into the skillet. Cook the chicken for 5 minutes. DO NOT TURN. You are not browning the chicken, just warming it up.
Step 4: Place the skillet in the preheated oven and cook for 35-40 minutes, until internal temperature is 165 F and the juices run clear. The chicken will be browned and pretty dark on top.
