Ingredients

The ingredients are:
  • 90 grams rolled oats (1 cup)
  • 45 grams wholemeal spelt flour (1/4 cup)
  • 2 eggs
  • 300 ml unsweetened almond milk
  • 1 tablespoon honey, plus 2 teaspoons extra
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 150 g mixed berries, frozen
  • 2 nectarines, halved and thinly sliced
  • 250 grams natural yoghurt

How to Make

  • Step 1: Combine the oats and flour in a large bowl.

  • Step 2: Whisk the eggs, milk, honey, vanilla and cinnamon in a jug until combined and pour over oat mixture and stir until well combined and place in the fridge for 30 minutes to soak.

  • Step 3: Preheat oven to 180C/160C fan forced.

  • Step 4: Lightly spray a 1 Liter (4 cup) baking dish with oil.

  • Step 5: Stir berries through oat mixture and pour into prepared dish and then arrange nectarine on top and bake for 25 minutes or until golden and set. T

  • Step 6: Op with yoghurt and extra honey and serve.
