Ingredients

The ingredients are:
  • 1 French (8.8 ounce) bread loaf (baguette, thinly sliced, equalling 1 baguette)
  • 1 round (8 ounce) brie cheese
  • 2 cups cranberries (whole fresh or frozen cranberries)
  • 1/3 cup brown sugar
  • 1/2 cup orange juice (freshly squeezed or store-bought carton)
  • 1 tablespoon orange zest
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract (may be substituted with orange extract and/or 1 to 2 tablespoons spiced rum)
  • 1/2 teaspoon ground allspice
  • 1/3 cup balsamic vinegar

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Making the Crostini

  • Step 2: Place the baguette slices on a baking sheet and put into the oven to bake for 5-7 minutes, or until slightly crisp. Remove from the oven and allow to cool.

  • Making the Cranberry balsamic Sauce

  • Step 3: While cheese is baking, place the cranberries, sugar, and orange juice in a saucepan over medium heat.

  • Step 4: Cook, stirring occasionally, until the cranberries pop, about 10 minutes.

  • Step 5: Add the balsamic vinegar, orange zest, cinnamon, allspice, extract, and continue to cook, stirring occasionally, for 5 minutes, or until thickened.

  • Baking the Brie

  • Step 6: Grease a small cast-iron skillet with olive oil cooking spray (or grease with a small amount of olive oil right out of your canister).

  • Step 7: Place the brie round in the cast iron skillet and place it in a preheated oven.

  • Step 8: Bake for about 15-20 minutes, or until the brie is softened & getting soft and gooey. Remove from the oven.

  • Step 9: Spoon some of the cranberry balsamic sauce on top of the baked brie and serve with the warm crostini. Enjoy!
