Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 1 garlic clove, minced
  • 4 cups snap peas (shelled, this will take about 4 pounds of unshelled peas, sugar snap peas)
  • 2 ounces prosciutto ham (prosciutto de parma, minced)
  • 1 tablespoon parsley, chopped
  • 1 1/2 cups scallions (green onions, white and pale green parts chopped)
  • Salt & pepper

How to Make

  • Step 1: In a skillet over medium heat heat 2 tablespoons olive oil and then add the garlic and saute for a minute and then add the peas and prosciutto, stirring to coat. Add 1/4 cup water and bring to a simmer and cook at a simmer for 5 minutes or until tender.

  • Step 2: Stir in parsley and the green onions and cook for another minute. Season with salt and pepper.

  • Step 3: Just before serving add 1 tablespoon oil.
