Ingredients

The ingredients are:
  • 700 grams pork cutlets (4 x 175 grams cutlets)
  • 1 tablespoon Tuscan seasoning
  • 600 grams Mediterranean chargrilled vegetables (1 packet frozen)
  • 350 grams tomatoes, a jar Italian tomatoes and grilled bell peppers pasta sauce specified
  • 60 grams baby spinach leaves, fresh
  • Sliced breadstick, to serve

How to Make

  • Step 1: Sprinkle both sides of pork with the Tuscan seasoning.

  • Step 2: Heat an oiled, large, non-stick frying pan over a medium to high heat and add pork and cook for about 3 to 4 minutes on each side, or until tender.

  • Step 3: Remove and rest, loosely covered with foil for 2 minutes.

  • Step 4: Meanwhile, heat an oiled, medium, non-stick frying pan over a medium heat and add frozen vegetables and cook, stirring occasionally, for about 5 minutes, or until tender and then add sauce and stir for a further 2 minutes, or until hot.

  • Step 5: Remove from heat and stir in spinach and serve pork with vegetables and breadstick.
