Ingredients

The ingredients are:
  • 2 teaspoons olive oil
  • 1 garlic clove, finely minced
  • 1 shallot, finely diced
  • 1/4 cup onion,minced
  • 4 cups vegetable stock
  • 1 can (14 1/2 ounce) tomatoes,diced
  • 1 can (14 1/2 ounce)cannoli beans,drained
  • 1 can (15 ounces) spinach
  • 4 ounces dry small pasta shells ,(1⁄2 cup)
  • 1/4 teaspoons rosemary
  • 1/4 teaspoon italian seasoning
  • 1⁄8 teaspoon black pepper
  • 1/16 teaspoon crushed red pepper flakes

How to Make

  • Step 1: In a large sauce pan

  • Step 2: Saute the onion shallots & garlic in the olive oil.

  • Step 3: Add broth, tomatoes, beans and spinach to pot.

  • Step 4: Add Seasonings

  • Step 5: Add black and red pepper.

  • Step 6: Bring to boil.

  • Step 7: Add pasta and cook 12 minutes

  • Step 8: If the soup seems too thick for your liking add a bit more broth.
