Ingredients

The ingredients are:
  • 1 1/2 kilograms chicken thighs, cubed (can use chicken breasts)
  • 100 grams bacon rashers, diced (4 rashers specified)
  • 150 grams mushrooms, sliced
  • 1 cup broccoli, sliced
  • 1 onion, large and sliced
  • 1/2 cup red capsicum, sliced
  • 1/2 cup green capsicum, sliced
  • 50 grams French onion soup mix
  • 3 tablespoons plain flour
  • 1 1/2 cup water
  • 3 tablespoons sour cream, optional
  • 1 tablespoon parsley, chopped
  • 1 tablespoon oil

How to Make

  • Step 1: Combine flour and onion soup mix in plastic bag and add a few chicken pieces, secure bag and shake well to coat.

  • Step 2: Repeat until all chicken is coated and reserve left over flour mix.

  • Step 3: Cook chicken in a large pan with oil until browned all over and then add the bacon and vegetables and stir until onion is soft.

  • Step 4: Blend reserved flour mixture with water and add to pan.

  • Step 5: Bring to the boil, reduce heat, and simmer, covered, for 20 minutes, or until chicken is tender.

  • Step 6: Meanwhile, cook rice or pasta.

  • Step 7: Add sour cream and parsley to the chicken, stir through.

  • Step 8: Serve chicken with the rice.
