Ingredients

The ingredients are:
  • 3 tablespoons sesame oil (toasted, divided)
  • 10 ounces shrimp (medium-size shrimp, peeled and deveined)
  • 5 eggs, lightly beaten
  • 1 cup green onions (sliced, divided)
  • 16 ounces cauliflower (fresh or frozen riced)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt

How to Make

  • Step 1: Heat 1 1/2 teaspoons sesame oil in a large nonstick skillet over medium-high. Add the shrimp; cook for 3 minutes.

  • Step 2: Remove the shrimp from the pan.

  • Step 3: Return the pan to medium-high heat. Add 1 1/2 teaspoons oil.

  • Step 4: Add the eggs; cook for 2 minutes or until almost set, stirring once.

  • Step 5: Fold the cooked eggs in half and remove from the pan. Cool and cut into 1/2 inch pieces.

  • Step 6: Heat the remaining 2 tablespoons oil in the pan over medium-high heat.

  • Step 7: Add 3/4 cup of the green onions and the cauliflower; cook for 5 minutes without stirring, or until browned.

  • Step 8: Stir in the shrimp, eggs, pepper, and salt.

  • Step 9: Top with the remaining 1/4 cup green onions.
