Step 1: Heat 1 1/2 teaspoons sesame oil in a large nonstick skillet over medium-high. Add the shrimp; cook for 3 minutes.
Step 2: Remove the shrimp from the pan.
Step 3: Return the pan to medium-high heat. Add 1 1/2 teaspoons oil.
Step 4: Add the eggs; cook for 2 minutes or until almost set, stirring once.
Step 5: Fold the cooked eggs in half and remove from the pan. Cool and cut into 1/2 inch pieces.
Step 6: Heat the remaining 2 tablespoons oil in the pan over medium-high heat.
Step 7: Add 3/4 cup of the green onions and the cauliflower; cook for 5 minutes without stirring, or until browned.
Step 8: Stir in the shrimp, eggs, pepper, and salt.
Step 9: Top with the remaining 1/4 cup green onions.
