Ingredients

The ingredients are:
  • 1 kilogram potatoes, sliced 5mm thick
  • 2 tablespoon olive oil
  • 1/2 cup grated cheddar
  • 1/2 cup tomato salsa
  • 1 avocado, deseeded & diced
  • 1/4 cup sour cream
  • 1/3 cup coriander leaves, roughly
  • Salt flakes
  • Freshly ground black pepper

How to Make

  • Step 1: Preheat oven to 240∞C (220∞C fan-forced) and line two baking trays with baking paper.

  • Step 2: Place sliced potatoes in a mixing bowl with oil, salt and pepper, tossing until well coated and then evenly divide and spread between prepared baking trays and roast in preheated oven for 30 minutes, turning every 10 minutes and swapping the trays between the shelves.

  • Step 3: Sprinkle cheddar over potatoes for the final 2 minutes of cooking or until cheese has melted.

  • Step 4: Place cheesy potatoes on a serving platter topped with salsa, avocado, sour cream and coriander.
