Step 1: Preheat oven to 375 F.
Step 2: Bring water,chocolate square, butter, salt, and sugar to boil, then remove from heat, add flour mixed with cocoa powder, and mix well.
Step 3: Return to heat, and cook for another minute.
Step 4: Remove from heat again, and add one by one, 4 eggs, beating each for 1 minute working fast with a hand mixer. Until smooth and glossy DON'T OVERBEAT
Step 5: Spoon 1/4 cup dough 2 inches apart onto a large baking sheet lined with parchment paper.
Step 6: Bake for about 30 minutes,
Step 7: Take them out, cut of about top third of each puff, and return them to the oven for another 5 minutes to dry them out.
Step 8: Cool, and fill with cream.
