  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 1 cup red bell pepper, chopped
  • 1 garlic clove, minced
  • ¼ teaspoons salt
  • ½ teaspoons pepper
  • 1 cup water
  • 1 package (12 ounce) frozen lima beans
  • 1 cup frozen corn
  • ½ cup poblano pepper,roasted, peeled, chopped
  • 1 can (15 ounces) creamed corn
  • 2 tablespoons fresh cilantro,minced
  • 1 green onions,minced

How to Make

  • Step 1: Heat oil in Dutch oven over medium-low heat.

  • Step 2: Add onion, bell pepper and garlic and sauté for about 5 minutes, stirring occasionally.

  • Step 3: Add the salt, pepper, and water.

  • Step 4: Bring to boil.

  • Step 5: Add lima beans.

  • Step 6: Bring back to boil.

  • Step 7: Reduce heat and simmer, covered, for 8 minutes, stirring occasionally.

  • Step 8: Add corns and green chile.

  • Step 9: Bring back to a simmer, cover and simmer for 5 minutes, stirring occasionally.

  • Step 10: Stir in cilantro and green onion.

  • Step 11: Taste.

  • Step 12: Add more salt and pepper if needed
