  • 1 teaspoons butter
  • 2 eggs, poached
  • 2 tablespoons butter
  • 2 ounces country ham,sliced
  • 6 ounces spinach
  • 2 mushrooms,sliced
  • 1/16 teaspoon pepper
  • 1/16 teaspoon paprika
  • 1/4 cup hollandaise sauce

How to Make

  • Step 1: While eggs are poaching

  • Step 2: In skillet heat butter

  • Step 3: Grill ham and mushrooms and spinach

  • Step 4: Butter muffins after toasted

  • Step 5: Put on top of each slice a piece of ham

  • Step 6: Then the wilted spinach

  • Step 7: Then make a nest of the mushroom for the egg

  • Step 8: Top with egg

  • Step 9: Top with hollandaise sauce

  • Step 10: Dust lightly with pepper and paprika
