The ingredients are:
  • 1 pound Velveeta cheese (block processed American cheese, such as Velveeta)
  • 1 can (10 ounce) diced tomatoes (with chiles)
  • 1/4 cup beer (lager or any light beer, you'll have to drink the rest yourself)
  • 2 tablespoons onion, finely minced (or grated)
  • 1 clove garlic, finely minced (or grated)
  • 1/4 cup chopped cilantro
  • 1/8 teaspoon dried oregano, preferably Mexican oregano
  • 1/2 teaspoon fresh lime zest, plus 2 teaspoons juice
  • 1/4 cup thinly sliced scallions, to garnish

How to Make

  • Step 1: Cut cheese into cubes and place in a medium saucepan along with the diced tomatoes and beer.

  • Step 4: Can be kept warm in a slow cooker while serving.
