Ingredients

The ingredients are:
  • Bowl:
  • 1 cup beansprouts
  • 1 lime ,wedged
  • 1 carrot,grated
  • 1 daiken white radish,grated (if its a big one , not all of it )
  • 1 birdseye chili, minced
  • 1/4 cup cilantro, minced
  • 8 butter lettuce leaves
  • 1/4 cup mint,chopped
  • 7 ounces dried vermicelli rice noodles,rehydrated
  • Meatballs:
  • 1/3 cup green onions ,minced
  • 1/4 teaspoon white pepper
  • 1 pound ground pork
  • 1 tablespoons lemongrass , fresh, ground to paste
  • 1 tablespoons fish sauce
  • 1 clove garlic,smashed
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 1 1/2 tablespoons oil
  • 1 birdseye chili,minced
  • Dressing:
  • 2 tablespoons rice wine vinegar
  • 1/3 cup water
  • 1 birdseye chili,minced
  • 1 clove garlic,smashed
  • 2 tablespoons lime juice
  • 3 tablespoons fish sauce
  • 1 tablespoons sugar

How to Make

  • Step 1: Sauce: Mix ingredients.

  • Step 2: Set aside 10 minutes

  • Step 3: Noodles: Pour over boiling water and soak per packet directions.

  • Step 4: Drain, set aside.

  • Step 5: MEATBALLS:

  • Step 6: Mix all ingredients except oil until combined.

  • Step 7: Shape into 8 patties

  • Step 8: Heat oil in a skillet over medium high heat.

  • Step 9: Add patties and cook for 2 1/2 minutes or until golden.

  • Step 10: Flip, cook 2 minutes then remove.

  • Step 11: ASSEMBLE BOWLS:

  • Step 12: Divide ingredients into 1/4ths

  • Step 13: Place noodles in bowl.

  • Step 14: Add beansprouts

  • Step 15: Wedge in lettuce, carrots and radish on side

  • Step 16: Place meatballs on top

  • Step 17: Top with chili, cilantro and mint.

  • Step 18: Spoon over a generous amount of Sauce
