  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup butter, softened (SALTED butter, 1 1/2 sticks)
  • 2 large eggs
  • 2 teaspoons vanilla
  • 6 ounces unsweetened coconut (shredded, about 1 cup)
  • 7 ounces Macadamia nuts (whole, about 1 1/2 cups)

How to Make

  • Step 1: Preheat oven to 300 F

  • Step 2: In a medium bowl, combine flour, soda, and salt. Mix well with a whisk and set aside.

  • Step 3: In a large mixer bowl, blend the sugars at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add eggs and vanilla. Beat at medium speed until light and fluffy.

  • Step 4: Add the flour mixture, the coconut, and nuts. Blend at low speed just until combined. Don't overmix.

  • Step 5: Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake for 22-24 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.
