Ingredients

The ingredients are:
  • 1 cup flour
  • 4 ounces Macadamia nuts (raw, coarsely chopped, about 1 cup)
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup butter, softened (SALTED butter, 1 stick)
  • 1/2 cup light corn syrup
  • 1/2 cup packed dark brown sugar
  • 2 teaspoons vanilla
  • 2 ounces mini semisweet chocolate chips (about 1/2 cup)

How to Make

  • Step 1: Preheat oven to 375 F

  • Step 2: Combine flour, nuts and coconut in a medium bowl, then set aside.

  • Step 3: Heat the butter, corn syrup, and brown sugar in a 2 quart saucepan until boiling, stirring occasionally. Remove from heat and stir in the vanilla.

  • Step 4: Add the flour mixture a few big spoonfuls at a time stir with each addition until well incorporated. When all the flour is incorporated, set aside to cool.

  • Step 5: When cool, add the chocolate chips and stir until incorporated throughout.

  • Step 6: Drop by half teaspoons onto well greased cookie sheets, 2 inches apart, Bake 8 to 10 minutes, or until the mixture spreads and bubbles.

  • Step 7: Cool cookies for 1 minute on the cookie sheet. Then immediately transfer to a cool, flat surface with a metal spatula. Cookies will stay soft until completely cooled.
