Step 1: Plate butter muffins
Step 2: Top with Canadian bacon crisscross bacon
Step 3: Top with eggs
Step 4: Divide the butter into four chunks.
Step 5: Place it in a 1-quart microwave-safe bowl and cover with a paper towel.
Step 6: Microwave for 45-60 seconds on high until it is soft.
Step 7: Remove from the oven and stir to complete the melting process.
Step 8: Remove butter from the microwave and stir until completely melted.
Step 9: Separate eggs.
Step 10: Whisk the yolks, add the butter and stir well.
Step 11: Add cream and lemon juice and stir thoroughly.
Step 12: Place the mixture uncovered in the microwave and cook on high, uncovered, for 1-2 minutes.
Step 13: Stop the oven and stir it every 20 seconds so that it doesn’t overcook.
Step 14: It’s done when the mixture is slightly thick.
Step 15: Remove sauce from microwave.
Step 16: Add the pepper and mustard, stir
Step 17: Place on top of eggs
Step 18: Sprinkle on paprika and chives
Step 19: Put tomatoes on side
