Ingredients

The ingredients are:
  • 4 ounces english muffins (4)
  • 1 tablespoons butter
  • 8 ounces canadian bacon ,(8 slices),warmed
  • 8 ounces bacon,(8 slices) ,cooked crispy
  • Sauce:
  • 1/ 2 cup butter
  • 4 large egg yolks
  • 1/ 2 cup heavy cream
  • 2 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • Garnish:
  • 1/16 teaspoon paprika
  • 1/16 teaspoon white pepper
  • 1 tablespoons chives,minced
  • 8 slices tomato

How to Make

  • Step 1: Plate butter muffins

  • Step 2: Top with Canadian bacon crisscross bacon

  • Step 3: Top with eggs

  • Step 4: Divide the butter into four chunks.

  • Step 5: Place it in a 1-quart microwave-safe bowl and cover with a paper towel.

  • Step 6: Microwave for 45-60 seconds on high until it is soft.

  • Step 7: Remove from the oven and stir to complete the melting process.

  • Step 8: Remove butter from the microwave and stir until completely melted.

  • Step 9: Separate eggs.

  • Step 10: Whisk the yolks, add the butter and stir well.

  • Step 11: Add cream and lemon juice and stir thoroughly.

  • Step 12: Place the mixture uncovered in the microwave and cook on high, uncovered, for 1-2 minutes.

  • Step 13: Stop the oven and stir it every 20 seconds so that it doesn’t overcook.

  • Step 14: It’s done when the mixture is slightly thick.

  • Step 15: Remove sauce from microwave.

  • Step 16: Add the pepper and mustard, stir

  • Step 17: Place on top of eggs

  • Step 18: Sprinkle on paprika and chives

  • Step 19: Put tomatoes on side
