Ingredients

The ingredients are:
  • 2 pounds tomatoes (cherry tomatoes)
  • 1/2 onion, sliced lengthwise (red onion)
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • Kosher salt
  • 1 pound tomatoes (heirloom tomatoes, cored and sliced cross-wise)
  • Pepper
  • 1 cup peppermint leaves (torn into bite size pieces)
  • Sea salt

How to Make

  • Step 1: In a bowl add the cherry tomatoes with the red onion, olive oil and vinegar; toss and then add the salt and let stand for 20 minutes, stirring every 5 minutes or so.

  • Step 2: Arrange the heirloom tomatoes on a platter and then add the cherry tomatoes and dressing on top. Season with pepper and sprinkle the mint and sea salt over all.
