Ingredients

The ingredients are:
  • 2 (3 pounds each) whole chickens (broiler-fryer chickens, cut up)
  • 3/4 cup chopped parsley
  • 24 ounces medium green bell peppers, seeded and chopped (= 4 peppers)
  • 32 ounces large yellow onions, chopped (= 4 large onions)
  • 2 tablespoons vegetable oil
  • 25 ounces whole tomatoes (= about 5 tomatoes), quartered
  • 1 teaspoon mace (nutmeg can be substituted)
  • 2 tablespoons curry powder
  • 1 clove garlic, chopped fine
  • Salt to taste
  • Pepper to taste
  • 1½ cups flour, seasoned well (to taste)
  • 6 ounces currants (or seedless raisins) (= 1 cup currants)
  • 28 ounces cooked rice (= 4 cups)
  • ½ pound toasted almonds

How to Make

  • Step 1: Sauté parsley, peppers, and onions in oil till tender.

  • Step 2: Pour into roaster, adding tomatoes, spices, seasoning.

  • Step 3: Cook gently on top of stove 15 minutes, then add garlic.

  • Step 4: While sauce is cooking, dredge chicken pieces in flour and brown.

  • Step 5: Lay chicken pieces in sauce and bake covered at 275' for 1½ hours.

  • Step 6: Add currants 20 minutes before serving.

  • Step 7: Arrange chicken pieces on rice, top with sauce, sprinkle with almonds.
