Step 1: Heat oil medium heat, in a wok or large skillet.
Step 2: Add onions and mushrooms, saute for about 6 minutes or until the mushrooms have browned and the onion is translucent, season with salt and pepper.
Step 3: Turn heat to medium high, add bok choy, flip it with the mushrooms and onions. Only cook the bok choy for a minute or two.
Step 4: Add wine, or chipotle seasoning cover and cook for a further minute. Do not over cook the bok choy.
Step 5: You want it heated through but still have some crunch.
