Ingredients

The ingredients are:
  • 1 pound bacon, cut into lardons
  • 1 tablespoons fresh thyme
  • 1 tablespoons fresh rosemary,crushed
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 4 ounces green olives,chopped
  • 4 ounces black olives,sliced
  • 1/3 cup olive oil
  • 4 garlic cloves,minced
  • 1/4 cup cilantro,minced
  • 1 teaspoons salt
  • 32 ounces dry spaghetti
  • 6 cups water
  • 1/8 cup parmesan cheese,grated
  • 1/8 cup romano cheese,grated
  • 2 ounces swiss cheese,shredded
  • 4 eggs,beaten

How to Make

  • Step 1: Heat water with one bay leaf

  • Step 2: Add spaghetti cook until al dente

  • Step 3: Meanwhile

  • Step 4: Heat bacon with fresh herbs that should not have stems

  • Step 5: When half cooked

  • Step 6: Drain most of the grease(the original recipe didnt drain grease but we have oiler bacon here)

  • Step 7: Add olives

  • Step 8: Add garlic and oil

  • Step 9: Simmer

  • Step 10: Add cilantro at very end

  • Step 11: Drain pasta

  • Step 12: Put back into hot pot

  • Step 13: Add olive mixture

  • Step 14: Remove bay leaves and herb stems if any

  • Step 15: Season

  • Step 16: Add cheeses

  • Step 17: Add eggs

  • Step 18: Toss and cover
