  • 1 cup nonfat buttermilk
  • 1 cup rolled oats
  • ½ cup seedless dark raisins
  • 1 cup all-purpose flour (half whole-wheat flour and half white, or all white)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 tablespoons wheat germ
  • ⅓ cup butter, softened
  • ¼ cup light brown sugar, packed
  • 1 tablespoon honey
  • 1 egg

How to Make

  • Step 1: In small bowl combine the first 3 ingredients and let stand for about ½ hour--or until liquid is absorbed.

  • Step 2: In another bowl, combine the next 5 ingredients.

  • Step 3: In large mixing bowl, beat butter and sugar until mixture is light.

  • Step 4: Beat in the honey and egg.

  • Step 5: Add flour mixture and oat mixture to butter mixture, alternating the additions and stirring to moisten the dry ingredients after each addition.

  • Step 6: Divide the batter among 12 well-greased muffin cups.

  • Step 7: Bake at 400' 25-30 minutes.
