The ingredients are:
  • 4 1/2 pounds whole partridge (2 whole)
  • 12 ounces potatoes (2 potatoes, chopped)
  • 6 ounces carrots (2 carrots, chopped)
  • 1 yellow onion (sliced thin)
  • 2 cloves garlic, crushed
  • 4 cups chicken broth
  • Thyme (2 sprigs)
  • Rosemary (1 sprig)
  • 1 tablespoon bacon drippings
  • 1 teaspoon brown sugar
  • Salt and pepper, to taste

How to Make

  • Step 1: Place partridge in crock-pot.

  • Step 2: Add remaining ingredients.

  • Step 3: Cook on low for 8 hours or on high for 5 hours.

  • Step 4: Remove herb sprigs and throw away.

  • Step 5: Take partridge out and remove meat from bones.

  • Step 6: Return the meat to the crock-pot and mix.

  • Step 7: Serve.
