  • 7 ounces dry brown rice (cooked, 1 cup dry)
  • 4 cups prepared coleslaw mix with broccoli
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons green onion, chopped (1 green onion)
  • 4 tablespoons sesame ginger dressing (Soy Vay, Newman's Own, etc.)

  • Step 1: Divide brown rice In 2 bowls.

  • Step 2: Top each with half of the coleslaw mix and chicken.
