Ingredients

The ingredients are:
  • 375 grams dried penne rigate
  • 100 grams semi-dried tomatoes (chopped)
  • 1 jar (700 grams) pasta sauce (tomato)
  • 1/2 cup basil leaves, fresh and chopped
  • 1/3 cup flat-leaf parsley leaves, fresh and chopped
  • 2 tablespoons oregano leaves, fresh
  • 1/2 cup grated mozzarella cheese
  • 180 grams bocconcini, torn
  • Basil leaves, small fresh extra to serve
  • Mixed salad leaves, to serve

How to Make

  • Step 1: Preheat oven to 200C/180C fan- forced and Lightly grease a 6cm-deep, 8-cup-capacity ovenproof dish.l

  • Step 2: Place pasta, tomato, pasta sauce, 1 cup cold water, basil, parsley and half the oregano in prepared dish and season with salt and pepper and stir to combine and sprinkle with mozzarella and cover dish with greased foil.

  • Step 3: Bake for 40 minutes and then remove foil; top with bocconcini and bake, uncovered, for 15 minutes or until cheese is golden and pasta is tender and then let stand for 10 minutes.

  • Step 4: Top pasta bake with remaining oregano and extra basil leaves and serve with salad.
