Step 1: Preheat oven to 200°C/180°C fan forced and then heat the oil in a flameproof casserole dish over high heat and add the onion and cook, stirring, for 2 minutes or until the onion starts to soften and then add the lentils, tomatoes, tomato paste, garlic, thyme, paprika and stock cubes or powder and season and cook, stirring, for 1 minute.
Step 2: Add the frozen vegetables and 125ml (1 1/2 cup) water and cook, stirring often, for 5 minutes.
Step 3: Smooth the surface then arrange the sweet potato chips on top and bake for 35-40 minutes or until the sweet potato chips are crispy.
Step 4: Top the cottage pie with extra thyme, if using.
