Ingredients

The ingredients are:
  • 1/4 cup olive oil
  • 1 1/2 teaspoons minced garlic cloves
  • ½ teaspoon paprika
  • 2 teaspoon finely chopped fresh parsley
  • 1/4 teaspoon adobo seasoning
  • 1 cup bell pepper (cut into 1” squares, 1 medium pepper)
  • 7 ounce chorizo sausage (Spanish Chorizo, cut into ¼” rounds)
  • ½ cup onion, cut into 1” squares
  • 1/2 cup tomatoes (grape tomatoes. 8 tomatoes)

How to Make

  • Step 1: Mix together first 5 ingredients and set aside.

  • Step 2: Thread peppers, chorizo and onions among 8 skewers, beginning and ending with pepper.

  • Step 3: Add a grape tomato to end of each skewer.

  • Step 4: Heat grill to medium heat.

  • Step 5: Add skewers to hot, greased grill grates.

  • Step 6: Cook, turning skewers occasionally, until vegetables are tender and chorizo is well browned, about 5 minutes.

  • Step 7: Transfer skewers to platter; drizzle with reserved sauce.
