  • 1.8 kilogram Granny Smith apples, peeled, cored, quartered (about 12 apples)
  • 1/2 cup caster sugar (110 grams(
  • 1 lemon, finely grated zest
  • 3 teaspoons cornflour
  • Vanilla ice cream, to serve
  • 1 lemon, juice of (use the lemon you zested)
  • CINNAMON CRUMBLE:-
  • 1 3/4 cups plain flour (260 grams)
  • 200 grams unsalted butter, chopped
  • 1 teaspoon baking powder
  • 1/2 cup caster sugar (110 grams)
  • 1/4 cup demerara sugar (55 grams)
  • 1 teaspoon ground cinnamon

How to Make

  • Step 1: Preheat the oven to 180°C and grease a 2 Litre (8-cup), 30 cm round ovenproof dish.

  • Step 2: For the crumble, place flour in a bowl and using your fingers, rub in butter until it resembles coarse crumbs and then add baking powder, sugars, cinnamon and a pinch of salt, and stir to combine and chill until required.

  • Step 3: To make the filling, combine apple, sugar, lemon zest and juice in a saucepan over medium-high heat and stir until sugar dissolves.

  • Step 4: Cover, reduce heat to medium-low and cook for 8-10 minutes or until apple is just tender.

  • Step 5: Combine cornflour in a bowl with 1 tablespoon hot water, then stir into apple mixture and transfer to prepared dish and top with crumble.

  • Step 6: Bake for 50-55 minutes or until golden and bubbling.

  • Step 7: Serve hot with ice cream.
