Ingredients

The ingredients are:
  • 400 grams udon noodles (2 x 200 gram packets)
  • 4 (560 grams) salmon fillets (skin on portions with skin removed and coarsely chopped, 2 x 280 gram packets)
  • 150 grams teriyaki sauce (& sesame stir-fry sauce)
  • 350 grams mixed vegetables (superfood vegetable mix)
  • 2 spring onions, thinly sliced

How to Make

  • Step 1: Cook the noodles following packet directions and then drain.

  • Step 2: Place the salmon in a large bowl with the infusion paste from the stir-fry sauce packet and toss to combine.

  • Step 3: Heat a wok or large non-stick frying pan over high heat and stir-fry the salmon, in 2 batches, for 3-4 mins or until cooked.

  • Step 4: Return the salmon to the wok or pan with the vegetables and the finishing sauce from the sauce packet and stir-fry for 1 min or until the vegetables are tender.

  • Step 5: Add the noodles to the wok or pan and stir-fry for 1 min or until well combined and heated through. Sprinkle with spring onion to serve.
