Ingredients

  • 1 package (6 ounces) bacon, diced (thick-cut)
  • 1 cup corn, frozen
  • 8 scallions, minced
  • 3 cloves garlic, smashed
  • 2 pounds shrimp (large shrimp, 31/35, peeled and de-veined, thawed if frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon ancho chili powder
  • 1/2 teaspoon salt
  • 1/4 cup cilantro,minced (fresh)
  • 2 tablespoons fresh lime juice
  • 1 package (16 ounces) corn tortillas
  • 1/2 cup guacamole sauce
  • FOR LIME CREMA
  • 8 ounces sour cream
  • 2 tablespoons lime juice
  • 1/16 teaspoon salt

How to Make

  • Step 1: Heat the bacon. Remove

  • Step 2: Add corn to bacon grease, then add the shrimp, seasoning and garlic.

  • Step 3: Add green onions; cook until translucent

  • Step 4: Add cilantro and lime juice; Toss to combined. Then add the bacon back in

  • Step 5: Meanwhile, make crema by mixing all ingredients together

  • Step 6: Put in bowl then add in the tomatoes, and the avocado in another bowl

  • Step 7: Meanwhile, heat tortillas in microwave until warmed
