Ingredients

The ingredients are:
  • 660 grams dandelion greens (12 cups) cleaned, chopped)
  • 2 cups potatoes, chopped
  • 5 tablespoons olive oil (or whatever you prefer)
  • 3 cloves garlic, chopped
  • 1/4 teaspoon cayenne pepper flakes
  • Salt, to taste

How to Make

  • Step 1: Place the greens and potatoes in a large pot and cover them with water. Boil them for 5 minutes. Turn off the heat. Drain afterwards, but reserve 1 cup of the liquid and set it aside.

  • Step 2: In a large skillet, heat the olive oil on low to medium and add the garlic and cayenne pepper flakes. Next add the greens and potato mixture, the 1 cup of reserved liquid, and the salt (to taste).

  • Step 3: Simmer everything for 20 to 30 minutes. Mash things up with a potato masher.
