  • 1/3 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons grated lemon rind
  • 1 teaspoon oil (canola oil)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon kosher salt
  • 2 tablespoons lemon juice
  • 1 teaspoon unsalted butter (melted)

How to Make

  • Step 1: Preheat the broiler to high; arrange the rack about 4 inches from the heating element.

  • Step 2: Arrange the asparagus on a foil-lined baking sheet. Coat the asparagus with cooking spray.

  • Step 3: Broil the asparagus for 8 minutes or until almost tender, stirring once.

  • Step 4: Combine the panko, Parmesan cheese, lemon rind, canola oil, black pepper and salt in a bowl. Sprinkle the panko mixture over the asparagus.
