  • 2 cups corn (frozen)
  • 1 can (15 ounces) hominy, drained
  • 8 ounces cucumber, diced (peeled)
  • 1/2 cup red onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 1 can (15 ounces) garbanzo beans (chickpeas ,drained)
  • 16 ounces tomatoes, chopped
  • 1 can (6 ounces) sliced black olives (drained)
  • 3 mushrooms, sliced
  • 1 tablespoons parsley, minced
  • FOR DRESSING
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • 1 tablespoons lemon juice
  • 2 teaspoons mustard (grainy)
