Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken thighs
  • 1 3/4 cups water
  • 2/3 cup orzo, uncooked
  • 12 ounces carrots (baby carrots, halved if large, it is pretty if multi colored and/or if tops are left on)
  • 1 lemon, zest and juiced (you need about 1 teaspoon zest and 3 tablespoons juice)
  • 1 teaspoon Italian seasoning (crushed)
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • Parsley, chopped, optional garnish

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: In a skillet over medium high heat, brown the chicken for about 5 minutes. Add the next 8 ingredients (-pepper) and bring to a boil and then cover skillet.

  • Step 3: Transfer to oven and bake for 25-30 minutes or until chicken is done. Sprinkle with parsley if desired.
