Step 1: Drain the chicken broth into a 4 quart pot. Set the chicken aside. Add the canned potatoes, canned peas and carrots, celery seed (if using), salt and pepper to the pot. Bring to a simmer.
Step 2: Meanwhile, very carefully debone the chicken. There will be lots of tiny bones.(What I did was debone the whole thing once. Then I did it two more times in little bunches to make sure I got all the bones.) Add the chicken to the pot. Turn the heat to medium so that everything can start bubbling.
Step 3: When it's bubbling, mix together 2 tablespoons of baking mix with 1/4 cup water. Add this to the pot, mixing it in.
Step 4: FOR THE DUMPLINGS:
Step 5: In a large bowl, combine 2 cups baking mix and 3/4 cup evaporated milk. Stir well. Spoon on top of the bubbling mixture in the pot.
Step 6: Let it simmer uncovered for 10 minutes. Cover, simmering for 10 minutes more.
