Ingredients

The ingredients are:
  • FOR PUMPKIN BREAD
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 3 cups sugar
  • 1 cup oil (vegetable oil)
  • 4 eggs, lightly beaten
  • 2 cups pureed pumpkin (pure pack)
  • 3 teaspoons vanilla extract
  • 1/3 cup water
  • 1 1/2 cups chopped pecans (optional)
  • FOR ORANGE SAUCE
  • 1 orange, whole (juice of)
  • 1 tablespoon lemon juice
  • 1 cup water
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • Orange rind (grated rind of one orange)
  • Lemon rind (grated from half a lemon)
  • 1 tablespoon butter
  • 1 egg, lightly beaten
  • 1/2 teaspoon orange or lemon extract

How to Make

  • For Pumpkin Bread

  • Step 1: Preheat oven to 350-degrees-Fahrenheit.

  • Step 2: In a large bowl, combine flour, baking soda, salt, spices, and sugar. Add oil, eggs, pumpkin, vanilla extract, and water; beating until well blended.

  • Step 3: Stir in pecans. Pour into two well-greased and floured - 9 x 5 x 5" loaf pans. Bake for 1 hour or until a toothpick comes out clean.

  • Step 4: Remove from pans and cool on wire racks. Serve with orange sauce.

  • For Orange Sauce

  • Step 5: In a medium saucepan, combine juices and water. Add sugar and cornstarch, stirring to dissolve. Stir in rinds and butter. Place on medium heat, and cook until mixture boils and thickens.

  • Step 6: Remove from heat, and beat in the egg and extract. Allow to cool and store in an airtight container.

  • Step 7: Serve warm or cold.
